While this final finishing period normally lasts about 8 months, the producer dedicated an unprecedented 13 months, pouring an immense amount of time and effort into raising this beef to its peak condition.
Composed almost entirely of lean red meat, this beef possesses a satisfying firmness. This texture gives way to a sophisticated and profound umami—a flavor that emerges gradually and leaves a lasting, memorable impression.
