We will begin selling beef from a 12-year-old mature Ibusana cow starting November 8th

Announcing a special release on Friday, November 8, 2024: A 12-year-old mature Ibusana cow (a Takenotani Tsuru Ushi x Tajima cross).

Ibusana is an exceptional hybrid beef that inherits the finest qualities from both its parent breeds: the ancient Takenotani Tsuru Ushi and the premium Japanese Black (Tajima, in this instance).”

This beef strikes a perfect balance: more marbled than the lean Takenotani Tsuru Ushi, yet without the overpowering richness of common Kuroge Wagyu, allowing the meat’s intrinsic umami to truly shine. While the yield was modest at 214kg, it has produced a beautifully conditioned Grade 2 beef, which is exactly the quality we pursue. (Our philosophy isn’t to chase the A5 rank, but to perfect the art of producing delicious, umami-rich red meat within the 2nd and 3rd grades.) We will be serving this exceptional beef until the end of November and would be honored to welcome you.
